I'd found a few apple cake recipes and wanted to have a go at making one (as I had some apples to use up). I found one I particually liked the look of in a magazine too, so thought I'd combine them, tweek them abit (mainly because of what I had in my cupboards already) and have a go. So to start, get your oven onto 180C or Gas 4. Peel, core and dice your 4 apples (you can put a bit of lemon juice on them if you like). Then in a bowl, cream together 250g butter, 250g caster sugar and 1tsp vanilla extract until pale and well mixed. Add the 4 eggs one by one and then finally fold in 80g of plain flour and the chopped apples. Next, pour that mixture into your tin (you could line your tin or grease it – I used a silicone one so didn’t have to do either).Now mix together 80g muscovado sugar, 2tsp cinnamon, 60g of chopped mixed nuts (I used hazelnuts and walnuts) and 50g of melted butter together in another bowl and then carefully put that on top of the apple cake mixture. Bake for 50mins until firm (or until a knife comes out clean from the centre). Sprinke with a light dusting of icing sugar and cut up into squares served up with a good cuppa! Perfect for those colder days.
